Make your own okonomiyaki before your train leaves
Inside Hiroshima Station there is a teppan studio run by Otafuku, the company that makes the sauce every okonomiyaki in this city is finished with. You put on an apron, stand at a full-size steel griddle, and build the real thing layer by layer — batter, a mountain of cabbage, noodles, egg — with staff talking you through every flip. Ninety minutes later you eat what you made. You can do this with luggage in a coin locker and a shinkansen to catch.

Okonomiyaki is the dish Hiroshima will not stop talking about, and eating one downtown is easy. Making one is different — the flip alone (a full pancake, noodles and all, turned with two spatulas) is the kind of thing you want supervision for.
OKOSTA is Otafuku's own studio on the first floor of ekie, the mall fused to Hiroshima Station. Sessions run three times a day (10:30, 13:00, 18:30 — about 90 minutes), everything is provided, and the staff are used to first-timers and travelers. Vegetarian and halal-friendly arrangements exist if you ask when booking.
Book ahead — it is fully reservation-based and slots fill on weekends.
One note on the two booking buttons below: the first is OKOSTA itself, booked directly with Otafuku. The second is a different okonomiyaki class, run by a local guide elsewhere in the city — a good fallback if OKOSTA's three daily sessions are full, which happens on weekends and holidays.
