Most brewery visits in Japan take you through a museum wing: old tools behind glass, a video, a shop. This is not that. Saijotsuru opens its working floor to a small number of people and closes it again.
The rooms smell of what is happening in them rather than of polish. Questions get answered properly, because you are talking to the people doing the work.
What you see depends on when you come. In the cold months the brewing is live and the building is busy. Outside the season it is quieter, and the conversation carries more of the weight.
Numbers are small and dates are limited, so book this before you arrive in Hiroshima rather than on the morning. If you have already walked the seven breweries, this is the one that goes deeper.
